SENATE RESOLUTION
2
WHEREAS, Illinois is the fourth-largest pork producer in
3
the United States, contributing an estimated $13.8 billion to
4
the State's economy and supporting over 57,000 jobs; and
5
WHEREAS, Pork is the most widely eaten protein in the
6
world, and consumers have a variety of delicious cuts as
7
choices, including bacon; and
8
WHEREAS, Bacon is a hot commodity and is not just eaten for
9
breakfast anymore, although it is eaten with eggs 71% of the
10
time; and
11
WHEREAS, Each year, the average American eats 18 pounds of
12
bacon, and Illinois pig farmers produce over six billion
13
slices of it; and
14
WHEREAS, Bacon has high amounts of vitamin B3, also called
15
niacin, which is colloquially known as the fountain of youth;
16
and
17
WHEREAS, Oscar Mayer patented the bacon slice in 1924; and
18
WHEREAS, Some refer to bacon as the "meat candy", as
19
incorporating it into sweet treats adds a savory and salty

element to traditional desserts; the smoky, rich flavor of
2
bacon complements a variety of sweet ingredients, as in the
3
popular candied bacon dessert, which typically involves
4
coating strips of bacon in a mixture of brown sugar, maple
5
syrup, and spices, such as black pepper or cayenne pepper,
6
then baking until the sugar forms a crispy, caramelized
7
coating; and
8
WHEREAS, The hardworking pig farmers who raise this
9
high-quality product deserve our support; whether plain or
10
applewood smoked, store-bought or artisan-made, bacon is a
11
meat for any meal; and
12
WHEREAS, The phrase "Bacon Never Broke My Heart" goes
13
without saying; and
14
WHEREAS, National Bacon Day is celebrated in December, but
15
Illinois needs its own day to pay tribute to this decadent,
16
rich, and indulgent meat; therefore, be it
17
RESOLVED, BY THE SENATE OF THE ONE HUNDRED FOURTH GENERAL
18
ASSEMBLY OF THE STATE OF ILLINOIS, that we declare May 6, 2026
19
as Illinois Bacon Day in the State of Illinois and invite all
20
Illinoisans to thank a pig farmer by enjoying some delicious
21
slices of bacon; and be it further

RESOLVED, That a suitable copy of this resolution be
2
presented to the Illinois Pork Producers Association as a
3
symbol of our respect and esteem.
