H.R. No. 1168
R E S O L U T I O N
WHEREAS, Elemi in Horizon City was ranked No. 2 on the list of
"The 50 Best Tacos in Texas" published by
Texas Monthly
; and
WHEREAS, Married couple Emiliano and Kristal Marentes opened
Elemi in 2018; Mr. Marentes serves as the restaurant's head chef,
and he has been recognized twice by the James Beard Foundation as a
semifinalist for its Best Chef: Texas award and once as a
semifinalist for its Outstanding Chef award; and
WHEREAS, Most of Elemi's offerings are served on handmade
tortillas that are produced through nixtamalization, the ancient
Mesoamerican process of transforming heirloom corn into masa;
committed to sustainability and the preservation of Indigenous food
systems, the restaurant sources its corn from regional farmers and
prioritizes honoring traditions while pushing culinary boundaries;
over the years, it has been featured on the Hulu series
Taste the
Nation with Padma Lakshmi
, and it has received a $10,000 grant from
PepsiCo's Juntos Crecemos platform;
Texas Monthly
recognized the
restaurant for its Conejito Pibil taco, which is composed of rabbit
marinated in achiote and citrus; and
WHEREAS, A treasured local institution, Elemi has
contributed to the prosperity and distinct character of the Horizon
City community, and Emiliano and Kristal Marentes and their staff
are indeed worthy of recognition for this recent accomplishment;
now, therefore, be it
RESOLVED, That the House of Representatives of the 89th Texas
Legislature hereby congratulate Elemi on ranking No. 2 on
Texas
Monthly
's list of "The 50 Best Tacos in Texas" and extend to all
those associated with the restaurant sincere best wishes for the
future; and, be it further
RESOLVED, That an official copy of this resolution be
prepared for the establishment as an expression of high regard by
the Texas House of Representatives.
