WHEREAS, Kimchi is a traditional Korean dish with a long, rich 1
history beginning over 2,000 years ago during the time of the three 2
kingdoms of Korea; and 3
WHEREAS, "Kimjang," the process by which kimchi is prepared, has 4
been recognized as an Intangible Cultural Heritage of Humanity by the 5
United Nations Educational, Scientific, and Cultural Organization; 6
and 7
WHEREAS, Kimchi is found for sale across the United States at 8
major retailers and is becoming an international staple as an 9
excellent source of probiotics, filate, beta-carotene, choline, 10
potassium, calcium, and vitamins A, C, and K, many of which 11
contribute to lower rates of stroke, cancer, and diabetes; and12
WHEREAS, The growing interest in and popularity of kimchi as a 13
dish in the United States, as evidenced by an increase in available 14
kimchi-related products, menu items, and interest from non-Korean 15
consumers, represents a positive example of multicultural exchange; 16
and 17
WHEREAS, South Korea celebrates "National Kimchi Day" on November 18
22nd, representing the 11 major ingredients and 22 health benefits of 19
the dish; and 20
WHEREAS, Washington state has the fifth highest concentration of 21
Korean Americans in the United States, and this growing community has 22
greatly contributed to the vibrant, diverse culture of the state;23

NOW, THEREFORE, BE IT RESOLVED, That the House of Representatives 1
celebrate November 22nd as Kimchi Day in recognition of the history 2
and importance of a beloved food staple first introduced in 3
Washington state by the Korean American community. 4
